Todays Recipe is a take on Tofu in the bid to try new ingredients. In this previous post, I mentioned my new year hope of making my tofu debut! Having never tried tofu before, I came up with this recipe as a way to combine this new ingredient with familiar ingredients and it turned out to be great for a light dinner or filling lunch without the extra heaviness. Couscous being a light type of carbohydrate makes this possible to achieve whiles getting in enough calories to keep you going. Do give this a try and I hope you enjoy!  More recipes Here!

This recipe serves 2 people with healthy portions and takes about 30 minutes to make. To make this Tofu Couscous Stir Fry recipe, here are the ingredients you will need -

Tofu couscous Stir Fry Ingredients couscous

300g of Tofu
1 cup of chopped carrots
1 cup of green beans
1 clove of garlic
3 tbs of tomato juice (from chopped tin tomatoes)
1 tbs of olive oil
1/2 tbs of sesame oil
salt to taste
1/3 tsp of ground peppercorns or black pepper 
1/2 a cup of coucous
100ml hot water

1. Turn your stove to medium heat or gas mark 5 out of 6 and transfer your olive oil into the saucepan. Allow the oil to heat up slightly until it sizzles gently when you add the tofu, and add in your tofu.
2. Allow the tofu to cook well on one side for about 5 minutes, until its turning golden and then turn on to the other side and allow to cook. As it cooks, break it down into medium pieces with your spoon, almost like with scrambled eggs.
3. Add in your carrots and green beans and then cover and allow to cook with steam for about 10 minutes, making sure to stir half way.

4. Once the mixture has cooked, add in your garlic, salt to taste, tomato juice and peppercorn/black pepper. Give that a good stir and allow to cook for about 5 minutes.
5. While it cooks, prepare your couscous by pouring into the dry couscous, enough hot water to a level just above the couscous, this is about 100ml. Leave the couscous for about 5 minutes in order to allow it to soak up the hot water.
6. Transfer the ready couscous into the stir fry mixture and stir. Cover and leave to cook with steam for a final 10 minutes, stirring half way.
