Chicken Spinach Soup Recipe | [Video Included]

Try this chicken spinach soup recipe in the last days of winter or even later. Healthy, tasty, full of proteins and iron and great for the non red meat person. This recipe is light yet filling and is therefore great if you are trying to portion size. Also, there are a couple of ingredient substitutes to make it healthier! Ingredients
This recipe serves 2 to 3 people and takes about 35 to 40 minutes to make. To make this Chicken

Chicken Spinach Soup Ingredients
100g of chicken breast (sliced into quarters)
50g of pre-cooked spinach
2 tbs of plain white flour
1 cup of Alpro coconut milk (healthier substitute for cream or tin coconut milk)
1 large carrot
1 small white potato
1 small white onion
4 tbs of olive oil
2 cloves of garlic (chopped)
1/2 tsp of butter or margarine (is all you need)
1/3 tsp of white pepper
1/3 tsp of black pepper or pepprcorns
1/3 tsp of turmeric
1/2 tsp thyme
1/2 - 3/4 of a chicken stock cube (like knorr or maggi)
100-150ml of water

Directions
1. Turn your cooker to medium heat or mark 5 out of 6 and pour into your saucepan, 3 tablespoons of olive oil, allow that to come to a slight heat.
2. Add in your onions and allow to cook for about 3-5 minutes.
3. Add in your chicken breast and 50ml of water to prevent the chicken from sticking to the pan, especially when cooking with silver or stainless steel saucepans.
4. Allow the chicken to cook on one side until it turns white then flip it onto the other side until that side also turns white. Then add in your white pepper, black pepper or peppercorn and thyme. Give that a stir.
5. Add in your garlic, carrots and potatoes and give that a final stir and allow to cook for about 5 minutes.

6. Whiles that is cooking, mix your flour with the coconut milk. This mixture does not need to be smooth and perfect as it will dissolve at a later stage. This is our substitute for cream.
7. Add this mixture into the chicken as well as your turmeric, spinach and stock cube. Give that a final stir, the sauce will start to look yellow and the flour will dissolve. Cover and allow to cook for 10 minutes, making sure to stir in-between in order to prevent burning.

8. Take 1/3 of the chicken, cut it into chunks and set aside, then also take the sauce off the heat and allow to cool down. Once cool, transfer into your blender for blending. If you have a hand held blender, you can use that instead and blend in the saucepan.

9. Once blended until smooth, your mixture will turn into a paste. Tranfer the paste back into the saucepan and rinse out the blender into the paste with about 50-100ml of water depending on the texture you want. If you used a hand held blender, add 50-100ml of water straight into the soup.

10. Tranfer your chicken chunks that you set aside back into the soup and give that a stir. Allow to cook down under medium heat for a further 10 minutes making sure to stir in-between in order to prevent burning.
11. Then finally add in your butter and the last tablespoon of olive oil. Allow your soup to simmer down for a final 5 minutes.
